Ingredients:
2/3 cup of Organic Butter
2 Teaspoons Baking soda
3/4 cup Agave
1 Teaspoon Sea Salt
4 Organic Eggs
3 1/2 cups Organic Quinoa Flour
5 Organic Ripe Bananas
1 1/2 cups Walnuts
1 cup Organic Raisins
Cream the butter, the eggs and the Agave (I have been using light agave, the heavier may work well too, the recipe that I developed this from called for honey.) Add the baking soda, sea salt and flour gradually. Add the walnuts and raisins. Butter up and flour two glass loaf bread pans. Fold in the batter slowly moving from one pan to the next to ensure that you get an even set of loaves. Bake at 350° for up to an hour; give it the tooth pick test at about 45 minutes.


Some research says that Agave is not the best choice of sweeteners. Or at least, not as good as it claims to be because of the processing methods. I say, it’s always best to find the most natural, unprocessed ingredients whenever possible. So, I may choose to use an organic brown or raw sugar in this recipe. While this bread is much healthier than most, it’s still not an “everyday” food in my opinion. Sweet foods to mess around with our blood sugar levels. So, for me this would be a treat so, I’d just go with the sugar! There may be other natural sweetener options as well. If you have suggestions, I’d love to hear them!
